Lunchbox Ideas: Pizza Scrolls

If you are like me and are finding it hard to put together a lunchbox full of food your school aged child will actually eat... I have found a perfect recipe for you! These scrolls are super easy to make, and taste super yummy! Trust me, you will need to make extra!



Pizza Scrolls

What you will need:

  • Sliced ham (I use the Primo Brand 80g)

  • 1 1/2 cups of self-raising flour

  • 30g butter

  • 1/2 cup milk

  • 2 tbs of tomato paste (I get the squeeze bottle so I can use more than once)

  • 1-2 cups of grated cheese

**When making these scrolls I don't usually measure but put in rough amounts and check the mixture is the right consistency.


Method:

  1. Preheat oven to 200 degrees Celsius

  2. Spray muffin tray with cooking spray

  3. Sift flour into a bowl. Add butter. Rub butter into flour until mixture resembles breadcrumbs. Make a well in the centre. Add milk. Mix together into dough.

  4. Flour the surface you will use, and the rolling pin lightly.

  5. Roll dough into a square roughly 1cm thickness (or less)

  6. Spread tomato paste over dough leaving 1cm strip along the end.

  7. Place ham slices on top of paste, and sprinkle with cheese.

  8. Roll up like a swiss roll. 

  9. Cut into 2cm thick rounds, holding to keep shape

  10. Place into muffin tray Cook for 15 minutes or until golden brown.
